There are few foods that have the versatility and range of cheese. Capable of being both creamy and soft or sharp and earthy, it’s no wonder that cheese is loved so much that it managed to secure its own national holiday.

For all the home chefs out there celebrating National Cheese Lovers Day, here are some gourmet cheesy recipes to help you celebrate.

Ingredients:

  • 1 clove of garlic, halved crosswise
  • 1 ½ cups dry white wine
  • 1 tbsp. cornstarch
  • 2 tsp. kirsch
  • 2 cups coarsely grated Emmental cheese
  • 2 cups coarsely grated Gruyere

Directions:

Rub the inside of a 4-quart heavy pot with the garlic, and then add in wine and bring to a simmer over moderate heat. In a separate cup, stir together cornstarch and kirsch. Gradually add grated cheese into the pot, stirring constantly in a zigzag pattern (stirring in a circular motion will cause cheese to ball up).

Once the cheese is melted and creamy (do not let it boil), stir in separate cornstarch and kirsch mixture, bring mixture to a simmer for about 5 to 8 minutes and stir until thickened. Transfer into fondue pot set over a flame, and enjoy! For food pairings, head over to epicurious.com. 6 servings

Ingredients:

  • several slices of bacon
  • sandwich bread of your liking or sourdough bread
  • apricot preserves
  • brie cheese
  • butter
  • 1/3 cup balsamic vinegar
  • fresh basil

Directions:

Cook bacon and cool. Spread apricot preserves on both slices of bread, add brie and bacon, then sandwich together. Butter both sides of sandwich and grill over medium heat, covered.

While sandwich grills, put balsamic vinegar in a small microwavable container and microwave. Stir every minute until vinegar starts to boil, and then stir every 20 seconds until vinegar reaches syrupy consistency.

When grilled cheese sandwich is done, drizzle the balsamic reduction over it and garnish with basil. 1 serving

Ingredients:

  • ½ pound ziti
  • 2 cups milk
  • 2 cups coarsely grated gruyere cheese
  • 1 cup finely grated parmesan cheese
  • 2 large eggs
  • 3 diced slices of white bread
  • 2 tbsp unsalted butter
  • 1 diced medium onion
  • 1 minced garlic clove
  • 3 tbsp all-purpose flour
  • pinch cayenne pepper
  • 1/8 tsp freshly grated nutmeg
  • kosher salt
  • 8 ounces thinly sliced deli-boiled ham

Directions:

Preheat oven to 425 degrees. Boil large pot of salted water and add in ziti until cooked al dente. Drain and transfer to large bowl, toss with ¼ cup milk. Combine both cheeses in a bowl. In a separate bowl, beat ¼ cup milk and eggs. Fold in the bread and half the cheese mixture.

Melt butter over high heat in a saucepan; add the onion and garlic and cook until brown. Sprinkle in flour, cayenne, nutmeg, and 1 tsp kosher salt; cook and stir for about 2 minutes. Slowly add in 1 ½ cup milk and ¾ cup water, bring to boil and stir until thickened. Remove from heat and whisk in the remaining cheese, then add in pasta and toss.

Butter a shallow casserole dish, adding half if the pasta and topping with ham, then add in remaining pasta and cover with remaining ham and bread mixture. Bake for about 20 minutes or until golden and bubbly. 6 servings.

Apple Cranberry Gouda Puff Pastry Roses

Ingredients:

  • 2 sheets prepared puff pastry dough
  • 3 large gala apples
  • 3 cups water
  • 4 oz gouda cheese
  • 1 cup cranberry sauce
  • 1 lightly beaten egg

Directions:

Prepare puff pastry per package directions. Keep refrigerated until use. Core apples and slice very thinly, no more than 1/8 inch thick. Place water in medium sauce pan and bring to simmer. Add apple slices and let them simmer for 3-5 minutes. Cook just until their pliable, do not let them get mushy.

Strain apples and dry on a paper towel; let cool to room temperature.  Preheat oven to 425 degrees and spray muffin pan with nonstick cooking spray. Flour work surface and rolling pin. Roll out one sheet of puff pastry mix and cut into six long strips. Slice gouda into paper thin slices.

Brush bottom of puff pastry strip with beaten egg, then start laying apple slices along the top of the strip with the rounded edges sticking out above the dough. Overlap slices slightly and leave a small margin uncovered at the end of strip. Spread cranberry sauce on apples. Add gouda slices on top of apples, then roll pastry up. Brush some of the beaten egg onto uncovered margin and press pastry close. Then pinch excess dough at the bottom of the pastry closed.

Place each puff pastry rose in baking sheet and bake for 25 minutes or until apples are golden brown along the sides. 12 servings
